Rubber Gloves

Did you ever eat in a cafeteria or lunchroom where the workers wear these rubber gloves, or more likely plastic gloves?
If so, I have a question. What is the purpose of these? Is it to protect the food from contamination that might be on their hands?
If that is so, then what would you think if you saw one of them leaning on the wall behind the counter, still with glove? Or folding their arms with the gloves in the mix?
That is what I thought.
So maybe it is that they need to protect their hands from the food. That must be it.
Is this similar to the feeling you get when you see the sign on a school bus "DANGER CHILDREN" as if they were explosive or contagious.
Sometimes it seems like things are just a little bit backwards.
